Peeled Sweet Shrimp With Tails On

Shrimp peeled back to the last segment with the tails left on, laid out in close rows. They are plump and glossy, a pale translucent white flecked with pink and a deeper red along the tail fan.

With the shell already off there is no shelling or deveining to do. Add them at the very end of a stir-fry, a soup or a noodle dish — being this small they cook through in under a minute, so leave them in only as long as it takes for them to turn opaque — or fold them through a bowl of rice or noodles once it is off the heat.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
